So far so good, but cappacola has 10 more ounces to lose before I try the finished product. One concern I have is the two week cure process did not firm up the pork as much as your and Ballistic BBQ videos would lead me to believe. Makes me concerned my cappacola might not be safe Time will tell. But I have enjoyed the process.
