I didn't have an accurate scale so I had to guess the amount of salt and spices and I made mine slightly on the salty side - but it tastes great. The Umai bags were a little finicky in my vacuum sealer but I figured them out pretty quickly. I will definitely use the product again and would definitely recommend them to others. Great results and really easy to use.

I have been using umai dry bags to make proscuitto for 18 months. It works very well. I've tasted many good prociuttos. Some very expensive. The taste of mine is second to none of them and better than most. Thank you for this great product.

What can I say other than this product exceeded my expectations. I am the type of cook that enjoys the process as well as the end result and the boneless ribeye that I aged fulfilled both. It's reasonably easy to do, and with the Umai and other assorted YouTube videos, you really can't go wrong. I would use the recommended type of vacuum sealer that has a "door" you close on the bag opening rather than the type that requires you to insert the bag opening into a slot to turn on the vacuum. This bag is not as thick as regular vacuum bags and will not work well with that type of machine. It's definitely worth trying out if you are any type of carnivore- I don't think you'll be disappointed!

Very happy with all of my Umai purchases. Only downside is once in a while I don't get a tight seal. It may be a problem with my sealer, but at any rate the bag ends up very loose. In my experience there doesn't seem to be much, if any difference in the final product, exactly like the lady at Umai said, when this happens. Without a curing chamber the Umai product work well. Best thing yet was a whole beef rib rack aged 51 days and cut into steaks, super!

Product was delivered quickly (and well-packaged). Easy to use and modify with foodsucker. It's a very convenient way to cure charcuterie or sausage if you don't have a curing/drying chest. I'm doing a chest/fridge comparison right now.

Hate these guys. Now I will never be satisfied with just a store bought steak on the grill. I bought a starter pack and have done 2 whole Ribeye roasts that I bought at Costco. I didn't know steak could taste so good. Made the mistake of just setting it on the shelf in the fridge the first time but learned my lesson and now use a drying rack to get the roast up in the air. I actually find myself lusting for a great BBQ steak dinner now quite often and the roast I made with part of the ribeye could not have been any better. If you haven't tied this you are nuts.

Love your product, have used them twice on 13 lbs. & 14 lbs. whole RibeyeBoth *****. my family & friends thought I was nuts. Everyone loved the results! Plan on using them regularly. I dry aged them both for 35 days, great results w/ very little effort.
