After seeing them used on several YouTube videos I thought that I'd give them a try -- all I can say is WOW -- to be able to age steaks so easily I just cannot understand why everyone doesn't do it -- my family loves the steaks because of the tenderness and flavor -- I sous vide them so they are absolutely perfect -- the only down side are the trimmings -- those I keep and grind them into my home made sausage -- it is difficult to spend $175 on a sub-primal cut of beef from Costco -- you will not be disappointed -- the only real downside if that every time I open the refrigerator door I see that meat and think it will be only a few more days until I get to eat them -- I've done a 35 and 45 day age -- others have done longer -- I highly recommend that you give it a try.
