I started with a choice cut of Prime Rib and dried it for 30 days. Trimming afterwards was easy, and there was absolutely a more tender texture to the meat and definitely more flavorful. I'm dry aging two Prime New Your Strip Sections now and will do 30 and 45 aging on them. Really expect to see great results even with one of my least favorite steak cuts. Love the product and recommend that if you have a 20 YO vacuum sealer get a new one.

I'm am sorry to report that my first experience was not a successful one.
I could not get the first bag to seal so I tried a second gay that failed later in the ageing process.
due too the fact it was costly to have the bags shipped to Canada i will not be ordering any more.
