This was a very simple way to age my rib-eye roast turning it into wonderful 1.25' steaks. I tried to use a newer model vacuum sealer, although it was suggested not to. I had to prove to myself (I guess) how difficult or nearly impossible it was for my level of patients. Once I acquired the clam shell style closing vacuum sealer it was simple. Getting a little experience with the first bag definitely improved the my experience with the second roast. I will absolutely use UMAi Dry again. I am not aware of any easier or better way to age meat.

I was really looking forward to using these bags after all of the YouTube videos I saw. However, once they arrived and I tried to vacuum the bag with the meat it didn't work. I wasted two bags trying this for hours. I followed the directions but it just wouldn't work.

I absolutely love UMAi Dry products. My favorite is the salumi casings, artisan pepperoni and sopressata that you just cannot buy. I even made turkey pepperoni.

The bags do not work but that is not the worst part of the product, they design them so you burn through bags in the sealing process and will need more ($$) and if you get them to seal which is very very difficult they have a entire set of rules they don't tell you about you have research for yourself about types of fridges, ambient room temps, air flow. if you think it'll be as easy as just popping this in your fridge you will be very upset. Stay far away from these bags.

This was my first experience making charcuterie. The hardest part of the process was waiting for it to be ready. I just tried the Lomo today and it was fantastic. My Bresaola should be ready tomorrow and I expect it to be just as good.

I dry aged an 11 pound choice strip loin for 33 days. The bag was a little tricky to get sealed, I had an air leak after the first seal, so next day I had to work a little more at getting a good seal. Don't let the people that have negatively reviewed the bags saying they don't seal up dissuade you from trying this. They obviously either have the wrong type of vacuum sealer, or don't know how to use one properly. It started to smell slightly funky partway through but by 26-28 days it smelled wonderful. It resembled a meteorite towards the end and I wondered if I''d ruined it. At 33 days I opened the bag and started trimming a 1/4 inch or so off and unveiled the most delicious looking meat! Sliced into 2 inch steaks, salt, pepper and a quick sear on the charcoal bbq and they are fantastic! High end steak house quality at a fraction of the price. Overall a 9/10, not 10/10 only because of the bag sealing challenge, but that really is a minor inconvenience. No, I'm not an Umai shill :)
