I have used the UMAi dry bags to do my Christmas Prime Rib (28 days) and it came out brilliant. I have also done a whole boneless New York for 42 days that melted in your mouth. Love the ease and simplicity of this product. Never know it could be so simple. The Bullseye BBQ videos on YouTube are a great tutorial on how to use these bags for your home dry aging.

While their dry bag works great, I'm disappointed that my order to Canada for a "dry sausage starter kit" did not come with a warning hat the bacterial culture included needs to be frozen immediately, warning which could have been on the envelope (or notice in the email order so that a notice on the envelope doesn't cause it to get stuck in customs since their support told me that's why they don't put a note on shipments to Canada). I left the envelope in a cupboard with the other drybags before opening not thinking that there was anything special with that kit so my bactoferm is now unusable. That stuff isn't cheap. They were also advertising a free spice blend with any order of dry sausage starter kit which I did not get. Not a big deal for the spice blend but I thought that it should be noted.

Bags are great though, I've referred quite a few customers. Previous experiences with them were good.

It took me two tries to figure out how to seal the bag correctly, but once I did the results have been amazing. Rib-eye looks amazing and I can't wait to cook it up.

I dry-aged a strip loin for 30 days. It was incredible! Reason for the 4 stars was the strip loin bag was too wide to use in the food saver dealer that was part of the package.

i have dry-aged beef several times now and always get compliments when serving those steaks. Every time we've done a blind taste test, the dry aged steaks win. This process tenderizes the meat and intensifies the flavor of the beef. I buy my meat from Costco. USDA choice NY strips and riveted are less than 9.00/lb. even after the cost of the Umai bags and taking consideration the reduction of weight that occurs during the dry-aging, the cost savings over buying dry-aged meat is considerable. The customer service from Umai is great. The Instructions are clear.

The immediate issue is determining which size bag to order for the cut of meat you want to dry age. Based on the information provided by UMAi I ended up with a bag that was too small and had to work around that by cutting my prime rib roast to fit the bag, not my first choice. Having done that the results were all that I expected and the meat aged properly. This was obviously my first attempt at using this procedure and I am very happy with the results.

The product works great in all forms - large bags to small as well as the tubes for salamis. Unfortunately, my wife will no longer consume store bought soppressata so I've been making it 7 lbs at a time! All the cured meats I made for the holidays were also a big hit. People didn't believe I actually cured all of them myself - but it is really easy to do!

Following the faulty directions cost me an approximately $6 bag, or, one third (1/3rd) of that entire package of bags. The directions say that if you have a bone in the meat you are packaging, place a moist paper towel over the bone. I am telling you, DO NOT PLACE A MOIST ANYTHING IN THE BAG WITH YOUR MEAT OR YOU WILL VACUUM MOISTURE INTO THE SEALING AREA AND RUIN A BAG! FREEZE THE MEAT AND/OR DRY THE MEAT OFF COMPLETELY BEFORE PLACING IT IN THE PACKAGE. Freezing it partially first, combined with patting it dry, and, putting a folded up DRY paper towel in the package works best. Don't worry, enough blood and moisture will come out of the meat to wet the paper towel! I packaged some fresh meat, and even after patting completely dry and putting a dry paper towel in the package, enough blood came out of the meat that I almost compromised another seal. Otherwise, they appear to be working exactly as advertised. After 7 days a nice bark is forming and the meat appears to be aging fine. The only reason I gave it 3 stars was following their directions cost me a good portion (33%) of the purchase price of a package of bags. I hope to save others from suffering the same mistake. PARTIALLY FREEZE THE MEAT, AND THEN, DRY THE MEAT COMPLETELY BEFORE PACKAGING WITH A DRY PAPER TOWEL IN THE PACKAGE FOR GOOD MEASURE!
