I've only used the sausage bag once, to make hot dogs, and am currently using it to make some speck. I'm a novice learning the craft. The hot dogs came out good; got the recipe from "Home Production of Quality Meats and Sausages" by Stanley and Adam Marianski. The only thing I did different from the recipe was to use the Umai sausage casing instead of the sheep casing.
