I have always wanted to try making my own cured sausages and salamis. I found these products while Googling recipes and decided to try them out. My first 50 pounds of pepperoni and sopprasota came out amazing. I used their bags and mixed my own spices. I am getting ready for my second batch and now have several friends interested. I haven't tried the bags for dry ageing steaks yet, but that is next.
