The UMAi bags are wonderful especially if you have no way of curing meats out of the refrigerator. I've done Pancetta's, Soppresetta, Capicola and Bresaola so far that have come out great and plan to do a lot more in the future.

I use the bags for full strip loins and ribeye boneless roasts. Dry aged 28 days, amazing steaks every time. Cut them 2" thick then reverse sear. Amazing product!!!
