I used your pre-mix salami recipe and am very impressed with the taste. I'm not usually a fan of anything pre-mixed but yours is good. I wish the instructions were a little more detailed, but once I figured everything out it went smooth without a hitch. Much, much easier than trying to build a drying chamber where it seems a bit more hit or miss for home use. I'll be ordering more, thank you!
