Unfortunately I have never had a successful experience with Umai dry. I have followed the recipes exactly. In each instance I had premature hardening of the external meat and essentially no curing of the interior meat. I had called the Umai dry crew a couple of times for advice and they were not helpful. Just told there were a lot of variables involved including local humidity etc. While they were able to tell me why I was unsuccessful they were not able to tell me how to be successful.

The products are innovative and make the home production of artisanal cured meats easier and practical. My biggest complaint is that the bags are made of such a thin material, they are very difficult to use unless you have the cheapest vacuum sealers. I have a heavier duty unit and it consistents fully melts through the bags, even with the seal temperature and duration turned way down. Lastly, the lack of flow channels does make vacuum sealing difficult. I would highly recommend a redesign of the bag with flow channels for vacuum sealing as well as either a heavier duty bag, or a sealing end that is heavier duty.

Our last batch of Soppressata (50 lbs) is coming out beautifully! We also made 5 lbs of Mettwurst and 5 lbs of Finocchiona as well, which I'm sure will also be awesome. For years I've made Capicola with my friend from Italy, and he was accustomed to his traditional methods. Since I've introduced him to the Umai Dry system, we've been making great dry cured meats all year long.

Pretty good dry age kit. We made a 20 lb ribeye in the fridge the souls vide and flame seared with a torch. Not quite restaurant quality but pretty good price

Umai bags are great for salamis, Land Yeagers, and great for dry aging steaks and Large pieces of meat.

The kits nickel and dime you to death. If you are using a vac sealer you require the extra strips for an extra fee. Why not include them in the package. Also make them more affordable.
The finished product is ok but not memorable.
