Right now I have a Choice Rib eye aging in the fridge. It was easy to do and soon we'll see what it tastes like. After Thanksgiving I'm going to try the dry sausages.

Excellent product that is perfectly designed to make wonderful, in-home charcuterie! Nothing else like it anywhere I've seen. Helps the beginner not waste precious, high quality meats to the vestiges of newbieism.

I have used various UMAi Dry products. I am the chef of the Battle Lake Boathouse restaurant. I highly recommend their products! I think this company has a ton of potential. Customer service, shipping speed, and my overall experience has been extremely positive and I have referred other chef friends to their website.

I love the UMAI Dry bags and their Charcuterie recipes. Their curing/drying method allows me to cure meats in an ordinary refrigerator without the need for a special curing chamber. So far I have made duck breast prosciutto, lonza, pancetta, and coppa. The results have been super. All you have to do is follow their online recipes, vacuum seal in their bags, and wait. That is the hardest part. Waiting for the product to dry/cure fully.

Awesome results the first time. A whole 'prime' prime rib roast aged 28 days, cut into steaks resulted in the best steak I have had. Also made capocolla and sausage. All great! I'll continue to experiment!

With so much educational videos on YouTube and your website this was so easy to do at home. I'm so glad I took the time to educate myself and to learn this new process. It turned out awesome and my family is really enjoying the steaks. Thank you so much next I think I want to get into sausage making .

2 out of 3 bags used did not seal well. all was dry when sealed, it seems that the bag material is not made to seal well. good thing there was extra space in the bag to cut off and redo. difficult to work with but i hope it works out in the end.

I occassionally get a full new york strip from costco and at my parties cut steaks to order, it is a lot of fun and everyone enjoys it. I decided to dry age one using the kit, wow what a difference. I made the event into a performance as I unwrapped the roast from the UMI bag and trimmed it up in front of my friends. Then cut steaks to order and cooked them up on a very hot green egg. Oh and the scraps didn't go to waste I prepared some doggie bags for those that had furry friends at home to enjoy. I havn't used the dry sausge kit that came yet, but am getting ready to shortly.

The Umai dry age bags are great. Last weekend I removed my 30 day dry aged strip loin and it was amazing.

Product worked great the first time I used it. My first project was a 14.5lbs prime rib and let it age for six weeks. The rib lost about 2.5lbs of liquid weight making the smoked prime rib most tasty! Panchetta is my next project! Recommend having a separate fridge to age your meats. They put of a pungent meat smell, not a rotten smell but a strong beef smell that may taint a normal fridge items.
