I've used the UMAI Dry bags and casings with 100% success. The bags have produced some of the best ribeye steaks I've ever eaten and that includes trips to some of the best steak-houses in New Orleans and Chicago. I've used the casings to produce some of the best pepperoni I've ever tasted. I used to make a several-hour pilgrimage to the Italian deli just to get some decent pepperoni---NO MORE! This stuff is too good to put on a pizza. I'll be checking out their Finocchiona spice mix next.

Pretty annoyed I got the aging bags sent from the states to Australia and I can’t use any vaccine sealer including a cryovac machine to actually seal the bags. It cost me quite a bit to get the package here in shipping to find I can not use them at all.

I believe your dry aging bag is the only way to go. For me there are too many issues putting meat in the refrigerator in a bed of rock salt uncovered. There are too many hands reaching in for food. With your bag it ensure the meet ages properly without being contaminated. Excellent product. I have told many friends
