Purchased a short loin to dry age, and could not get the bag to seal properly and eventually gave up. Not as easy as the videos make it out to be.

Patrick, The first time can be frustrating. Yes nice you see the great results when the bond forms between moist meat just 75-80% of the surface (no complete vacuum needed), you’ll be satisfied. Call us if you need extra bags to practice with: 612-741-6750.

I was looking to be able to replicate my commercial dry aging in home without purchasing additional appliances. I decided to try the product on a small Angus Choice Strip Loin. I got a great deal and the aging process looked to be performing excellent. I aged for 21 days. Took out and opened the lin. I was initially concerned as I did not get any of the usual tell tale aroma of a Nutty boy aged piece of beef. As far as the moisture evaporation it was excellent. Cleaned and cooked some scraps and again did not get the Nutty dry aged aroma I am used to. Cooked a full steak 1.5 in thick to a medium rare. It was good but not the same. It’s seems like all it’s doing is drying out the meat like sausage or something

Tim, You do need a manual lid and latch style FoodSaver, but; otherwise, it should be pretty easy. Just remember, these aren’t vacuum bags. Moist meat will create the necessary 75-80% surface contact bond. You don’t need a perfect vacuum. Call us if you need extra bags to practice with: 612-741-6750.

I haven't yet tasted the steak I'm aging, because I'm aging it about 45 days and am only about 30 into it but so far, I'm very happy with the bags. The process of getting the slab of beef into the bag could not be easier. The strip loin is looking looking like the ones at fancy steak houses look like when they're being aged and there is no smell at all in my fridge. So far a great product and have already convinced my neighbor to order some.

I ordered the large steak rib roast and strip loin bags as well as the small charcuterie bags. They worked better than I hoped for. The aged ribeyes turned out fantastic after 35 days and my pork tenderloin and duck breast charcuterie is reaching the 40% weight loss I'm aiming for. This weekend I'm going to start a NY strip loin. You can never have enough dry aged beef!

So far, so good. Just received my kit yesterday and put a couple of chunks of pork into cure. I've so far been impressed by the amount of information UMAi gives to help in getting started. Charcuterie is something that I always thought I wouldn't be able to do (due mostly to the lack of a convenient cave...) and I am excited to see how this turns out. Being able to do this in my refrigerator is a huge game changer. The kit I received contained everything they said it would and the directions and helpful hints included in the package are very well done. I'll try to update this in a few weeks when my first capicola is out of the bag.
