When, like you, folks see that UMAi Dry and good modern frost free fridge make the process effortless, confidence is inevitable! Indeed, a 16 lb subprimal won't be squeezed into a Roast bag, but needs the Ribeye/Striploin size. We are so sorry you had to cut the subprimal in two.
