I'm very happy with the umai concept, the products and the service. It's a great benefit, especially for those who eat kosher meat which is always bathed in salted water and rarely aged. I would, and have, recommended umai products to friends here in London -- who are happily using them too.
Two comments: here in Britain (and Europe) the voltage is 230v rather than 115V and I think this leads the heating element in the vacuum sealed to be hotter than it would be in the US. What often happens is that the sealer melts through the bag altogether -- and the process didn't work. I've got the hang of it now, but it's gone wrong in the past. My recommendation is to check again with suppliers of the vacuum sealers -- and perhaps get a different one for the British and European markets.
